The H4-EX-AH is a universal Japanese Santoku knife with a blade length of 16.5 cm, which is more than impressive in all areas of cutting. It is not for nothing that the Japanese word "Santoku" means "three virtues" and describes the good qualities when cutting meat, fish and vegetables. So what we in western cuisine call the classic "chef's knife" or all-purpose knife corresponds to the Santoku in Japanese cuisine. - Here, it is perhaps more a matter of passion for which knife shape you choose.


Our Damascus Exclusive model is a true challenge in terms of craftsmanship when it comes to forging and grinding. 176 layers of the finest Damascus flank the cutting layer made of extremely hard and fine carbon steel. The slightly convex grind of the blades is impressive in terms of cutting performance. The handles made of multi-oiled and lightly buffed maple form a wonderful contrast to the magnificent blades.

The beautiful damask pattern is made visible by meticulous hand grinding and subsequent etching. This creates a slightly relief-like and topographical-looking surface, with ever new and unique patterns. Each damask knife is therefore a hand-made unique piece in its pattern and appearance with high standards of functionality, design and charisma.
