The translation means leaf cutter and gives this blade shape a vegetarian touch. The Japanese blade shape, which is mainly designed for pressure cutting, enables cuts that are not possible with a curved cutting edge. The blade is hand-forged and ground from the finest carbon steel with a sheath of pure iron. The dark to black etched cutting layer appears cloudy and has a different liveliness on each blade due to the handwork.
The H8 is ideal for all cutting tasks related to food preparation.
Special features:
- cutting edge made of the finest carbon steel
- Extremely sharp
- Excellent resharpening
- Rockwell hardness 62-63 HRC
Enjoy your knife: Keep your knives professionally sharp with a strop and water sharpening stone. Clean your knife under lukewarm water and use a scratch-free dishcloth. Dry thoroughly afterwards to avoid any patina.
