This Santoku knife, H10-D-MO, in the Damascus version, with a blade length of 12 cm is an all-rounder in every kitchen and a dream for cutting. "Three virtues" means "Santoku" in Japanese and translated into the world of knives, this Asian blade shape perfectly handles cutting tasks in meat, fish and vegetables. This small Santoku is, like its big brother, a real all-rounder and ideal for many uses in the kitchen. If you compare the small Santoku with western knife shapes, the use is best compared to the "Petit" universal knife. - Here it is perhaps more a matter of passion for which knife shape you decide.
The Damascus knife is forged from 240 layers of the finest carbon steel, hand-forged, ground and hand-finished with great skill. The finishing process creates a slightly relief-like and topographical-looking surface, with ever new and unique patterns. Each Damascus knife is therefore a hand-made unique piece in its pattern and appearance with high standards of functionality, design and charisma. The blade grind is flat and slightly convex and impresses with its excellent edge retention.
Special features:
- Blade made of finest 240-layer carbon Damascus
- Extremely sharp
- Excellent resharpenability
- Fine secondary phase
- Handle centuries-old bog oak, treated several times with hard oil
Enjoy your knife: Keep your knives professionally sharp with strops and water whetstones . Clean your knife under lukewarm water and use a scratch-free dishcloth. Dry thoroughly afterwards to avoid any patina.
